Produces alpha-glucosidase maltase, ergosterol, nicotinic acid niacin, pyrophosphatases, niacin-related compounds, and alpha-glucosidase in brewery waste. Produces yeast proteinase B inhibitor IB3 and endo-deoxyribonuclease A. Used in food testing.
