<- CBS <- NRRL. Isolated from cream (Meadowgold creamery, Champaign, Illinois, USA). Deposited as Kluyveromyces fragilis. Production of lactose, produces biomass on whey ultrafiltration- permeate of cheddar cheese. Production of ethanol from lactose (50 g/l) and beta-galactosidase from milk products. Biomass Production from dairy wastes and cheese whey. Ferments pentoses. Produces single-cell protein SCP. Produces butanediol dehydrogenase acetoin reductase. Used for fungus resistance testing adhesives
